Coolant Temperature sensor near the thermostat housing perhaps? If it's covered in goo, it'll never read as being warmed up, thus fast idling much longer. Are you also getting lousy mileage?
I can't remember which Fel-pro model number I used, but recall it was the revised version. All I can say is no matter which plastic gasket you you, also use "The Right Stuff" from permatex. It's what OEMs have been using instead of gaskets in many applications. Also, make SURE not to overtorque...
