Thanks for the replies and the info. I would be towing a trailer somewhere right around 5000 lbs with full tanks, etc. I'll make the 3.73 my minimum, 4.10 preferable. A 5.3L seems like it will work for us just fine since we aren't planning on upgrading to a 10000 lb trailer any time soon.
