Very unique engine issues

Okay ladies and gentlemen, I have a unique issue that I can't exactly place my finger one and I hope someone out there has an idea.

I own a 2005 Chevy Tahoe PPV with the 5.3L Vortec V8. Noticed lately that I am losing power steering fluid. Its one of the lines and I have plans to replace it, but I have other issues I wanted to address first. A few weeks ago, I topped off the reservoir and then when I started the truck, it acted like it was not getting fuel. Then as I drove it, it hesitated, but had high idle. When I slow down, it kept jerking forward like I was on the gas. The temp gage stopped working, but everytime the engine would hesitate, the temp gage would go up to the normal location, then go back down to zero. Then it just started acting normal again and stayed that way for weeks.

Last night, I filled my power steering reservoir again and this time, it just did not want to start. I finally got it started by depressing the accelerator to the floor. It started, wanted to stall out, but I put the accelerator to the floor until it started running fine. Again, the temp gage stopped working. And again, the vehicle would hesitate which would cause the temp gage to jump to normal and then fall to zero.

There are no DTC's related to this issue, just a code for a loose gas cap that keeps going off for no reason.

Whatever it is, it seems to be electrical, and somehow its connected to my power steering. Any ideas? Thanks.
