Another simple thing to think about is, if you had a sticker on the window at one point in time. I have seen rear defrosters not working because a removed sticker broke the connection.

Looks good! What did everything set you back? Do you have a programmer installed? If so was that calibration easy? I am looking to add some headers this summer to my 99 Tahoe.
No matter what configuration you go with, you should have pretty good sound quality because of the size of the cab. FOCAL speakers have amazing sound qulaity, you may pay alittle more up front. But you will never have to worry about them blowing out.

I know that you can take your Tahoe to the dealership and they can re-program it for the new tires. A programmer isn't a bad way to go if you are looking to do additional modifications to your Tahoe; intake, exhaust, pulleys.
