So I just bought my Tahoe and the rims that are on it are so common I find myself walking up to to other people's Tahoe's because mine looks like so many others I have a good set of 15" rims they are 15x8s. Will they clear everything?

Without knowing the offset the rims have, or the brake package your Tahoe has installed, or the tire you plan on running on the rim, it is impossible to tell from here. I believe (at least my local Goodyear does this) that you can take the rim down to your dealer and he will mount the tire you like and test fit it for you.
It's the only way to be sure.

Assuming that the offset is the same as the 16's I have on it they should fit I'm mostly worried about brake roter clearance

I doubt it. I tried swapping my 2000 Suburban and 1997 Tahoe wheels that are both 16" and they wouldn't clear each other because of the offset.
