about to install 26"s, anything i should know?

hey guys, just about to get some 26"s for my 07 Tahoe, what size/offset is going to work best? will it rub, and if so how do I cut the plastic in the wheel well?

consider upgrading your brakes,,,you'll lose a lot of stopping power with that much rotating mass.....fyi
