Thermostat Temp?

Hello,
I recently purchased a 2000 tahoe 5.7 and have a question about the thermostat. I seem to be running around 160 but from what I have read it should be more like 195. My guess is the former owner possibly installed the 160 thermostat to work with an aftermarket chip. My question is is it ok to run like this or should I look into switching back to the 195?

I don't have much faith in temp sensors or guages accuracy, I've accidentally broke 2 of them in 2 different cars (same engine, same stupid mistake both times) and had the temp on the guage change 10-20 degrees up or down from what it used to be when I put a new sensor on.

Never could figure out if the newer one was more right or the older one.

is the radiator full of coolant and the bottle up to the line? is your upper hose stiff when you shut it off?

The coolant is full and its running fine. I guess I'll just leave it alone for now.

I have the same issue. Thought my truck was running cool however just replaced the thermostat to a 195 over the weekend and there is no change.
