You'll probably want to go with the 15mm offset, otherwise you might have rubbing issues. That said you'll have about 1cm less space on the inside of the wheel well, and the tire will extend 4cm more on the outside than it currently does.

Your stock wheels have a 31mm offset. A higher number moves the wheel further into the wheelwell and a lower number moves them further out. The two offsets that you have a choice from are not optimal for the Tahoe. You typically will also be using wider tires with these wider wheels which adds size on both sides of the wheel as well.

The typical issues you will face in this scenario are that they could rub on the inside with a 38mm offset or stick out too far with the 15mm offset and spray stuff up off the road up the side of the truck.

The ideal offset with a 9.5" wide wheel for the Tahoe is +30. The +35 is going to bring the wheels in towards the truck and the +5mm difference is close to a 1/4 inch. The +15 IMO is going to stick out to much. The +35 wheels will work but I think you may want to go with a 295/40 or a 285/45 tire if you get those.
