If loaded properly, how logical would it be to tow my Cherokee with my '00 Tahoe, 5.3L 2wd?

With the proper trailer you should have no problems at all. Even if you have 3.42s in the rear, the towing capacity is well over what you'd be towing.

I easily towed my 6500 lb trailer with my 02 Yukon 4x4 loaded with camping gear. It has the trailering package, 5.3L engine, and a 4.10 rear and per the info from GM it is rated at towing 8000 lbs.
